Glossary


  • Baharat Makhloot:  A traditional Shami blend of 7 or 8 ground spices.  It may include black pepper, paprika, cinnamon, cardamon, coriander, cumin, nutmeg, and clove.
  • Biryani-- A traditional Indian/ Pakestani rice dish.  It may use either red meat, fish, or chicken with a complex blend of spices.
  • Dibis:  Syrup made from pomegranate (dibis romaan), carob (kharoub), or tamarind (tamar hindi)
  • Masha Allah--This Arabic phrase is used to denote understanding that everything we have been allowed in this Earthy existence is by the will of the Most Merciful alone.
  • Risotto-- An Italian dish based on very short grained rice cooked in broth. It has a creamy consistency.
  • Shami--The Sham region of the Middle East is known in English as The Levant.  Shami is the adjective referring to the cultural style of the Jordanian, Lebanese, Palestinian, and Syrian people.
